Gochujang is a traditional Korean spicy condiment made from fermented rice and fermented soybean paste mixed with chilies and syrup.
This gochujang paste, handcrafted in Germany, uses miso with amazake and doburoku. Amazake is a traditional Japanese drink made from fermented rice and has a sweet taste and a smooth, porridge-like consistency. Doburoku is an unfiltered sake that still contains small rice particles. The chili peppers used come from a nursery in Mecklenburg-Western Pomerania.
The taste of this gochujang is savory, spicy and sweet at the same time. Compared to the original Korean Gochujang, this one has a slightly fruitier taste. Their consistency is thick and pasty with still small pieces of Doburoku rice.
