Ayu is a small Japanese freshwater fish that can only survive in very clear, clean waters and is only allowed to be fished seasonally. Hence a specialty in Japan. This stock was developed on the basis of fermented Ayu juice and soy sauce. It is a concentrate that should be diluted for your applications.

Ingredients: water, SOY sauce, salt, cane sugar, dried BONITO, AYU extract, kombu algae
