Ssamjang is a Korean soybean paste with chili, sesame, garlic, onion, sugar.
Korean soybean pastes are basically comparable to Japanese miso pastes. However, they are made in a slightly different way.
The name "Ssamjang" literally translates to "wrapped (ssam) sauce (jang)", which indicates its main purpose: to enhance the taste of various wrapped dishes, especially Korean barbecue wraps known as "ssam".
Ssamjang's flavor profile is rich, savory and complex, with a perfect balance of salty, sweet and spicy elements. It is made by combining fermented soybean paste (doenjang) with red chili paste (gochujang), as well as various other ingredients that may vary depending on regional preferences and personal recipes.
The resulting spice has a thick, paste-like consistency and a deep reddish-brown color.
In terms of taste, Ssamjang adds spice and, above all, umami to all dishes. Ssamjang also adds spicy notes because of the chili peppers used in it.
